  • Roma Tomatoes, Diced 5
  • Olive Oil 2 Tbsp
  • Balsamic Vinegar 2 Tbsp
  • Garlic, Minced 2 Cloves
  • Basil 1 Tbsp
  • Artichoke Hearts, Drained 8 oz
  • Kalamata olives, Pitted and Drained 1/2 Cup
  • Uncooked Diced Chicken 2-1/2 Cups
  • Salt to taste
  • Pepper to taste

  1. Preheat oven to 350º F
  2. In a mixing bowl, combine olive oil, balsamic vinegar, garlic and basil
  3. Next add the diced tomatoes, artichokes and olives. Stir well to coat, and set aside
  4. Place chicken pieces in oven-safe baking dish and season with salt and pepper
  5. Next pour the bruschetta mixture over the chicken
  6. Bake 30-35 minutes, or until chicken is cooked through
